I made two huge loaves of banana bread a few months ago, and it was entirely gone within two days. You read that right, TWO days.. I don't have pictures, but it was some of the best banana bread I have ever had.
The recipe is as follows:
6 ripe bananas (you can use yellow but I prefer mine sweeter with brown spots for banana bread)
4 eggs
3 tbsp coconut oil
3/4 cup almond butter
5 tbsp melted butter
2 cups almond flour (or coconut flour if you prefer)
1 cup of brown sugar (or 1 cup honey, I didn't put honey in it this time because of my 12 month old)
2.5 tbsp cinnamon
2 tsp baking soda
2 tsp baking powder
1 tsp vanilla extract (I use homemade, but you can use store bought as well)
sea salt to taste
Preheat oven to 350 degrees Fahrenheit
Combine dry ingredients in a bowl.
In separate bowl combine banana, eggs, almond butter, coconut oil, and butter. Use standing mixer or hand mixer to blend well.
Add in dry ingredients slowly.
Blend it all together well, making sure the banana is well mixed.
Pour into a baking dish of your choice, I used 2 different sizes that also varied in depth.
Grease pan with coconut oil or butter. I baked for 35 minutes but some of you will need to bake it for 45 minutes to 50 minutes. Make sure it stays moist in the middle though, so take it out as soon as a toothpick comes out clean.
It melts in your mouth, and my whole family loved it. This is definitely one of our favorite recipes!
